Yikes. I just tried a different pan to hold the water that surrounds the custard cups. It's a Wilton cake pan with high sides. When I peeked at the baking custard, the water was furiously boiling and the custard was rising like a mountain. My custard was curdled. Still delicious, but not something I could serve company.

I googled for an almond recipe and found one. I may have to give this one a go, but I'd try half the recipe first just in case it failed. Takes a lot of eggs.

I don't do vegan, but Almond milk is half the calories of regular milk and I really like it on cereal. I'll stick to the skim milk for custard though. I wouldn't want to have to throw the batch away.

I've only done a bit of cooking with Almond Milk. It has its own reactions, but I'd guess there's a paleo or vegan recipe already out there.

@HAWKTHREE That might be why. Very interesting. I never knew you could make custard with powdered milk. A good idea. I wonder if you can make it with Almond Milk? Does anyone know?

I've been using part milk, part Nido. Wonder if the Nido has something to do with it. Easy enough to test this theory today!

I like the neatness of small cups because of portion control, but I admit that scrubbing a small cup that has a crusty edging is time consuming.

For those who haven't used Nido, it's a powdered milk that is 4% fat. The powdered milk I had as a kid was non-fat.

I make a lot of baked custard with the dish sitting in the water. I never have a crust on mine. Maybe you are cooking it a little too long? I use skim milk in mine and actually like it better than heavier milk. Also, I bake mine in one large dish instead of the small custard cups, but I don't think that makes a difference in crust, but it is easier and don't have all those little ramakin cups to wash out. Crust on top is a mystery. I will be interested in other's comments too.

So lately we've been eating a lot of baked custard -- the old-fashioned kind with individual servings baked in the oven but with the dishes sitting in water.

I can't recall how to prevent the top forming a "crust."
