Google "kale and herb stripper". I recently got one of these very inexpensive gadgets as a gift. It is really fun to use.

I like kale for a couple of reasons -- it's sturdier than spinach, spinach can be difficult to remove from things, it's full of nice nutrients.

But it seems so labor intensive.
Buying by the leaf is cheap, but you have to remove the giant vein up the middle and then chop the rest.
I've bought the pre-washed and chopped, but it usually includes the giant veins that remain tough so you still have to go through it and decide if a stem is too big.
If I want to make kale chips, the giant vein definitely has to go.
I've tried kitchen scissors -- not any faster than a sharp knife.
Finally for soup, I tried just dumping a bag into a pot and pre-cooking it and then turning it to liquid with a hand blender. Definitely faster, but the tough veins tended to go stringy rather than liquify.

Is there a faster way I'm missing
