i would substitute with sparkling or still water, or mix in a small amount of juice (start with half juice half water). i also make simple syrups at home with different flavors (blueberry rosemary- added to pineapple juice and sparkling water). sometimes i just use fruit- watermelon + mint is so good (and you can freeze for sorbet or popsicles!), mint + lemon + honey + ice is another fave :)

you could also try some kombucha or kefir to change it up.

Quite a few times, I have gotten library books about different mocktail recipes.

You can also check the supermarket spice shelves for alcohol flavor replacements. I use 'rum' flavoring and 'brandy' flavorings.

It isn't that I need to look for drinks. I just keep seeing cocktails that look like they would be good, but I am not interested in ones with alcohol in them. Mostly I don't like alcoholic drinks taste, but wonder if there is something that I can do to them to make them taste good or better than the alcoholic version.

Have you tried just looking for spa water or fancy lemonade recipes? If there is not any alcohol in the drink you do not have to worry about what to replace it with.

-google first. ask questions later.

I like to flavor my mocktails with citrus, other fruits or herbs. Fresh mint, basil or rosemary provide a nice backdrop in a beverage. A lemon or orange slice can add the final zip it needs. Muddling and straining (bartenders' tricks) will kick up any fruit or herbs profile. Try your favorite berry along with your favorite fresh herb in a glass of soda water. Or maybe steep some green tea with a variety of citrus. My favorite "mocktail" is cucumber, lemon and water.

You could try club soda or seltzer water.

Anyone know how to change cocktails to non-alcoholic drinks? I would guess some could use some "flavoring," but what do you do for the rest of the liquid? Water? I could see that for the recipe I was looking at this morning that was made with vodka, but don't know what you would use if something looked interesting and you didn't want alcohol. I never liked many alcohols much and now am not supposed to drink due to diabetes, but some of those drinks look like they might be good.
