Due to its sugar content, I can't eat corn on the cob (corn syrup anyone?), but other family members love it. I use the microwave to quickly prepare it. The nice thing about the microwave method is that the corn almost shucks itself.

I like mine either raw, lightly steamed, roasted with a little olive oil an lots of herbs or sautéed in the drippings from whatever protein I just cooked (this is my favorite for fast-cooking veggies I prefer cooked such as asparagus. You don't have to season them with anything extra, plus they kind of clean the pan for you at least part way!)

A good way to find what you like though is to try different preparations until you find ones you enjoy. I used to hate brussel sprouts because the only way I have had them was boiled and it reminded me too much of boiled cabbage which I don't like. The first time I had them roasted with a little bit of bacon I knew I have been eating them the wrong way all my life.

I like veggies plain with salt and pepper, so I microwave them with just a bit of water.

steamed or my own stir fry

I have pleurisy, 3 types of anemia from Iron,folic acid,other vitamins not working,chronic pneumonia, pleurisy, chronic kidney disease, a partially collapsed lung, low blood pressure & blood clots in both lungs for 3 years..I am 55 years old. I had cervical cancer 6 years ago, no signs last 4 years as well.I am on P.S.T. time zone.

A few ways: roasted in the oven with a spray of EVOO, grilled with EVOO and also steamed with Mrs. Dash seasoning...really depends on what I'm having with them on how I choose to prepare them

Steamed sauteed or microwaved. Add tiny bit of parmesan and pepper. Sometimes a little olive oil country crock with calcium for extra taste.!!

raw or steamed. I will by the frozen veggies as well and just stem those too unless I am tossing them into soup and then they just go right into my soup from the freezer.

What EVOO? I have never heard of that before. I am interested in talking to my family about it and seeing if they would like to give it a try. Esp. if it is healthier.

To get the nutrients from your vegetables you need an oil or fat on it.. I cook mine in olive oil normally, all in the same cast iron fry pan with whatever meat I want to prepare.

I'm vegetarian, so vegetables get incorporated into my foods in many different ways - they typically end up in soups or types of casseroles. A lot of that usually means they get stir fried with a bit of extra virgin olive oil, onions and garlic.

I'm a one-pot meal kind of person, so it's rare that I'll roast or steam veggies as a side. They're always a part of the main entree.

I love salads but they don't always have to include leafy greens. A raw salad of chopped green and yellow squash, cucumber, tomato, onion, and celery is great. I often add some beans for protein and fiber. Hubby is not the biggest fan of cooked beans or spinach. I can add some tomato sauce and cilantro and turmeric and he likes that. I like to microwave broccoli because it keeps that vibrant color. You can always add a bit of oregano and shredded or grated cheese on top of veggies to make them more appealing. One of my favorites is steamed carrots with a bit of butter and brown sugar. My Mom made them like that and I just love them.

I'm very picky with how I make vegetables. Some (like mushrooms and corn) I prefer eating cooked, either boiled or baked, and others like lettuce, cucumbers and carrots I prefer raw.

I'd rather eat them raw in a salad with EVOO with lemon juice and pepper for a dressing! You will absorb the nutrients in the veggies better with EVOO in your dressing!

Among the veggies I like in my salad : cucumbers, tomatoes, lettuce, okra, beetroot, mushrooms, baby spinach. Yes, you can eat okra, beetroot and even mushrooms raw!

Some veggies are chopped up in chunks and pan roasted or grilled with light seasoning, while some are cooked in spices. All on the mood and how I wish to eat them. I love veggies and pulses, so there is unlimited choice there.

I'm a big fan of chopping into large chunks, putting them on skewers and grilling with some seasonings and a big squeeze of lemon. I can pretty much trick myself into thinking anything is special if it's on a skewer.

Besides roasting, which is great because the vegetables are so tasty that way. Try fsteaming and add a squirt of lemon juice before serving. Also, yesterday I sautéed spinach with a little onion and garlic. Just a one or two second spray of evoo takes care of the oil. You can add cider vinegar to taste and just a bit of honey. Delicious!

I am also a big fan of roasting larger batches of veggies. It's easy to change up the flavors that way, and they can be incorporated into so many dishes. I use them on salads, as sides to protein, pureed into soups or sauces, on sandwiches, or underneath eggs!

I'm not a huge fan of raw greens, so I make sure to add baby spinach to my protein shakes (I freeze it myself from large containers) but I also like to sautee and pair with sweeter veggies- like kale + sweet potato.

Healthy choices and actions have positive impacts, even if the scale doesn't move!

Honestly, it depends on the vegetable, my mood, and what it's going with. Even for "salads" I quite often use chopped vegetables that I cooked earlier (think a mix of green beans, snap peas, asparagus, carrots, and broccoli - all either steamed or roasted to the point of caramelized, along with some roasted apple chunks and some raisins and a balsamic dressing).

I pretty much stick with roasting, grilling, lightly steaming, or stir-frying. I use a variety of oils and spices with them, but often prefer just the simplicity of the natural flavour. I find that mixing up more bitter vegetables (brussels sprouts, for instance) with sweeter vegetables or fruits during the cooking creates really enjoyable variances in flavours.
