Yes, I like to make this: Saute pine nuts to a nice toasty brown with some extra virgin olive oil, slice up kalamata olives and toss in to saute, chop of broccoli and toss in to saute too then sprinkle some sea salt and saute to your desired yumminess then eat! It's a nice veggie greek dish and my favorite!

I steam and add to salads. My husbands favourite is a broccoli salad, very lightly steamed broccoli, yogurt, lemon juice a tsp sugar, sunflower seeds, raisins, red onion, and feta cheese.

Not a huge fan of broccoli but if I roast it with some other vegies (cauliflower, carrots, red onion etc.) and a bit of olive oil (good fat needed) and some nice herbs it can be yummy!

I would venture to say that most people don't like steamed broccoli because they overcook it.

Your broccoli should be more wilted than limp, and certainly not falling apart! (You're cooking out valuable nutrients!) A little seasoning will do wonders salt, pepper, garlic, and or onion powder.

My favorite broccoli recipe is a little olive oil saute some garlic, throw in some soy sauce, and cook the broccoli a little. Soy sauce can get overpowering quickly get low sodium and be judicious in your usage.

Easy creamy broccoli soup that alas I can no longer enjoy as I used to because of its carbs.

Microwave or steam some broccoli -- it will reduce the bitter flavor some folks hate.

Chop the broccoli, dice a potato, grate sp,e carrot, and chop an onion (about a cup of broccoli and potato, half cup of carrot and onion.

Salt and pepper to taste.

Cook all until tender in two cups of chicken broth (our cans of Swanson's now have 14 ounces, so that will do).

When done, scoop out some of the veggies. Use a hand blender on the rest and turn it creamy. Return the veggies.

If you'd rather have it all creamy, then don't bother with dicing and just blender everything together.

If you're diet can take it, stir in some cream.

Topping ideas just before serving: parsley, parmesan cheese, chives

Other veggies that can easily be added to up the veggie count: kale, fresh parsley

Roasted broccoli is tasty. Just a little olive oil and garlic and bake at a high temp. Can mix with cauliflower, carrots, and root vegetables. Give it a try!!

Trader Joe's makes riced broccoli -- just broccoli stems dice tiny like rice pellets.
I like to toss this into a big pot of homemade soup. So nutritious and the harsh flavor is hidden.

After steaming broccoli, place it in a skillet with some heated olive oil, just a tad, and add lemon juice and sliced almonds. Yummy emoticon

I steam my broccoli in chicken broth and save the broth to be used later in a chicken/vegetable soup I eat almost every day.

A huge part of losing weight is believing you can do it and realizing it's not going to happen overnight.

I love broccoli also. And my son would eat steamed broccoli every night. It’s his favourite. Now his love of brussel sprouts I don’t share. But everyone is different

I don't agree. I think steamed broccoli is delicious. I love broccoli: steamed, sauteed, raw, plain ,dipped in ranch, every way. My kids like it too.

I have the broccoli steamed and my wife has her brussels sprouts steamed so we are both happy. Lite butter and some garlic salt. Never have enough broccoli in this house.

Sounds yummy. I like the flavor of plain steamed broccoli myself, but get tired of just that. Nice to add some other flavors but still healthy when cooking for others also.

Just roasted my broccoli for first time, along with the usual onions, peppers to add to frittata. Had to saute the mushrooms but otherwise prep time greatly reduce by roasting most of the veggies, not adding steam the broccoli to the prep.

I actually like my broccoli steamed, but occasionally I will roast on a pan in the oven with a bit of EVOO, salt and pepper. Sometimes I do broccoli and cauliflower together. I used to hate cauliflower, but oven roasted it is the best!

I steam it and then shock it in ice water Pull it out and let it drain. Then I pour lemon juice and two grated garlic cloves. I grate them with some Kosher salt then dress with olive oil. refrigerate for 30 minutes and you have a wonderful side dish.

Weight is the result of what you have been doing for the past week.

This is my go to recipe for broccoli, just realized it is similar to the roasting with garlic mentioned first. Still posting though, cuz I love this. And it works well with broccoli raab, kale, chards, etc.

The next day the leftovers can go in an egg white fritatta.

Steam the broccoli separately. Sautee 2 cloves garlic and 1/2 onion with a small amount of olive oil, or PAM if going fat free.... ( I recommend highest quality olive oil, though)

Then when onions are carmelized, add the steamed broccoli. The broccoli should be in small pieces so they are coated thoroughly with onions/garlic. Salt to taste....

I sometimes sauteed broccoli with mushrooms and carrots. For flavor, I use vegetable cube or chicken stick. If I serve it as main course, I throw in some protein, shrimp or chicken. Very pretty color.

I agree with Jennywren93, Garam marsala. I knowingly had it with some zucchini this evening. It was a spice in my ingredient basket for dinner. Yum! Great with a tomato sauce. Add some cauliflower baked with curry powder and a little olive oil to the dish. I know I've had this spice in the past when I've eaten out and had Indian food.

those yummy broccoli salads that use raw broccoli - you can use cooked broccoli in them, instead. I was concerned about raw broccoli being hard on my already stressed thyroid, so I did some experimenting. I love that salad and can eat it all day long. now, I make my own and since I prefer not to eat pork, I can leave out the bacon. :) (and no, i'm not interested in fake bacon, either.) LOL

LOL, just finished steaming some broccoli for breakfast! I added some brown rice and green split peas that I had left over. i topped it all with some grated "double cheddar" shredded cheese, which has melted beautifully. :)

Creamy broccoli soup:

Blanche the florets, then shock them in ice water.

In a big pot add a tiny bit of olive oil (or I suppose you could use nonstick spray), a small handful of uncooked rice (like 1-2 tbsp, brown or white), minced garlic, and the chopped-up stems. Stir and cook on medium till they start to brown & caramelize.

Add 3 cups of broth (chicken, veggie, whatever) and simmer until the stems are tender. Then puree it (use a food processor, blender or stick blender).

Add the florets and simmer for another 5 minutes or so. Salt & pepper to taste.

A light sprinkle of parmasean cheese is a nice but optional addition to a bowl.

Makes it nice and creamy thick, without cream, flour or other thickeners.

If you have leftover broccoli stems from another recipe, make them like this without the florets. It makes a delicious sauce, esp. for chicken or baked potatoes potatoes, or to mash in with mashed potatoes-- very low fat and low carb!

Stores in the freezer well too, so I make big batches and freeze them in quart-sized portions.

Toss it with some low fat plain yogurt, whole grain mustard (not a lot), fresh garlic, Parmesan and roast it.

When I'm not trying to be healthy I add loads of shredded cheddar but, I think its still super tasty without.

Mix some peanut butter, grated ginger, garlic and soy sauce together. Then chill the broccoli and dip it in the sauce. It makes a great snack too as long as you don't go too heavy on the sauce.

Prior Planning Prevents Poor Performance!


2017 and I am back again... up and down the same 5 lbs, this time on the higher side of 200, depressing since I had stayed just under 200 for almost a year.
Slim is where I wanted to be in 201 & 2011! Never happened, plateaued for a long time and gave up... got off track, but never left, so am back on track again!!! Make 2012 my year! So far, did finally lose 25 lbs. over the summer, but have found about 11 of it so far, it didn't hide g

My daughter sautes' it in a little canola oil with garlic pepper and kinda toasts it. Awesome flavor and so little effort. I do the same with cauliflower and baby carrots too, Team it with chicken breast and rice. Or saute it all together. Good way to use left over rice.

Personally I use ghee, olive oil isn't healthy to heat to high temps to try, nor do I like the taste.

I eat it raw. Broccoli is possibly my favorite vegetable!

Seriously, is there anything more boring than steamed broccoli? Yikes!

I know it's great roasted with some olive oil and garlic. Any other ideas?
