My favorite pickled beets are Aunt Nellie's Whole Pickled Beets, found in a jar. They are about 10 calories per beet. I haven't tried roasting fresh beets, but I'm putting on my list to try! Thanks for the idea!!

This is how I cook the white beets or even the red ones can be boiled first. It's so easy to skin them that way. I wash the greens stems and all and cut them about an inch. I saute garlic and onions for 3-4 minutes. Then add sliced beet and the greens. Season them as you like. It's done when the greens are wilted. You can cover the pan to quicken the time.

I love pickled beets. Could be a dumb question. How will the beets taste if I boil them in apple cider vinegar? Will they somewhat resemble pickled beets?

No I never tried them. I will have to look for them the next time I shop. Do you use the green tops? If so how do you fix them?

For the first time I bought the white beets. They were so good and not only that they did not bleed. Has anyone tried them? If so, how did you like them?

Love beets. Hubby and I had them on our salad today for lunch. I boil the beets until they feel soft when poked with a knife. I then take the skin off the beets. I slice them and put in salad. I washed the greens from the beets and I need to find a good recipe for them.

@TXSASSY76 - It really depends on how they're prepared. I love beets but not the stuff from cans. I like fresh and I like them roasted.

There's a lot of natural sugar in beets but a cup (uncooked) of beets only contains 54 calories.

They're really easy to prepare but be careful - they will permanently dye fabrics. I wear an apron because of it.

Anyway, yesterday I tried making noodles of them - peeled them (2 minutes), ran them through a spiralizer (2 minutes), tossed them in a bowl with some olive oil and S/P (1 minute), then roasted them for 20 minutes at 400 degrees.

They were sweet, tender, and juicy.

So, can I ask a question here???

What do beets taste like? The texture? And then finally, my husband bought a couple of cans of beets... I have NO IDEA how to make them - suggestions, please!?!?! Thanks!

For person who asked how to prepare beets for roasting, I usually cut up into large chunks and par-boil for 8-10 min with vinegar. Then place on large baking sheet with sesame oil and pepper and a bit of sea salt. Then roast about 35-45 min in a moderate oven. 350 degrees.

We love beets fresh from the farmer's market with the greens. I cook them separately unless they are rather tiny then cook them together.

We can find them in the stores most of the year. If we can't find them we buy canned ones.

I haven't tried roasting them but I know roasted veggies are good so will try roasting soon.

I am very blessed to have a family that likes beets. Roasted, pickled, diced in a salad. My husband fav dish is harvard beets. Boiled beets and a sauce made with sugar, corn starch and water. They are good that way too.

@EO4WELLNESS It's getting toward the end of our growing season and the beets tend to be smaller and tougher. You can blanch them in boiling water for a bit and the skins will slide off.

I enjoy eating beets too, however, lately I cannot find any normal looking ones--they are all odd looking. Anyone else having issues finding healthy-looking beets in their store?

I love to make roasted veggies. Just toss the veggies in some olive oil, sprinkle with powdered vegetable broth. Roast til tender.

I have wanted to try roasting some beets since I first saw a recipe for them. I keep checking our local store for them, but they don't seem to carry them all the time and the one time that I did get some and tried them they weren't very tasty. Turns out that it may not have been the way that I prepared them, but rather the fact that they were quite large in size and I should be looking for smaller beets. I keep looking for them, but the few times that I have seen them in the store, they are always the size of an onion.

Never tried them roasted, I pickled some today. they are low calorie,only 35 calories for one beet.

I LOVE roasted beets! I cut them up into bite sized chunks, put them in a foil "bowl" on a baking sheet (they "leak" alot!), drizzle with a lil olive oil, sprinkle a lil salt & pepper and pop them into a 375 oven for about 20 minutes. They are heavenly!!

I just started adding new vegetables to my grocery list and beets, was one of them. I use to eat them when I was younger, and stopped, now I have a taste for them, hope to keep them in my diet. emoticon

I have cut beets into slices, added cut carrots add salt and a tbsp of honey and then bake in the oven for about 15 minuets. SO GOOD

I love beets. I always boil them. I will have to try them roasted. I use the greens too. I chop them up and add them to salad mix or soup. I've also sautéed them. They have a lot of potassium.
