I adore my mom. She taught me how to bake, but fruit cake ugh!

She did teach me to bake a blond fruit cake. Which is yummy

Almond is one of my favorite flavors @SLIMMERKIWI

I'm going to have to get acquainted with elderberry. I've only seen it used in natural cough syrup.

MANDIETERRIER1 mentioned that her mother used to use licorice fondant in cake icing.

@DONNA_CPS2 I don't think there was licorice on any cakes mentioned, at least not licorice as Americans think of it. I believe licorice meant anise, which is the herb/spice that give black licorice its distinct flavor and smell. I think an anise flavor was used. I am sure I will be corrected if I am wrong. emoticon

Was there licorice on this cake? or did you mean another one? Since I am not fond of licorice in any form.

lemon and elderflower go very well together.

I never used licorice fondant, but used an almond fondant paste as the bottom layer and then a plain fondant on top. Then used the Royal Icing.

I love lemon cake. Never had elderberries, but I am sure I would like that, too.

I am so glad they broke tradition with their cake. It is true. Tradition is that you have an awful fruit cake decorated with nasty licorice fondant.

My mom makes them and I don't even like hers.

I guess you can tell how feel about fruit cake? LOL

Thanks for the info. I still have a lot of my Christmas panettone in its container. It lasts for months and it not as dense as the original fruitcake we used to make.

Kris, fruitcakes are definitely heavy! It's amazing how dense they are.

I used to make the heavy fruited Wedding/21st Birthday/Xmas Cakes, and believe me, they are HEAVY!!!!! The 14" square one used to take just on 3kg fruit alone, and my 'heavy fruited' cakes weren't quite has heavily fruited as some. Add to that over 1kg flour, over 1/2 kg butter. That is just over 4.5kg (10lb) just there. Add the water, the eggs, and the sugar, the Brandy etc... That was just a measly 14" square cake. Multiply that by the size of the Royal Wedding Cake alone, and then factor in the Royal Icing. I wouldn't be surprised if QEII's cake was MORE than 500lb.

Thanks for the photos, Arch. Wow..Queen Elizabeth's cake doesn't look like it ways 500 pounds. But, well, fruitcake is heavy. The other cakes are certainly extravagant.

MLAN,

This is a photograph of Queen Elizabeth's original wedding cake. I also read an article that said it was 500 pounds.

This photo is the recreation done for their 70th anniversary.

According to the Great British Bake Off, a fruit cake has been the traditional English wedding cake choice.

Traditionally, a English Royal wedding cake is fruitcake. I heard a fun fact that Queen Elizabeth II's cake weighed around 500 pounds.

Meghan (I love how she spells her name...lol) and Harry broke the fruitcake tradition. They had lemon sponge cake with elderflower syrup and lemon cake. It was frosted with an elderflower flavored buttercream. That sounds a lot more delicious than fruitcake and I would willingly try a piece.
