Right now I am very into sauerkraut. There's evidence that fermented veggies are really good for you, it's filling and has almost no calories, and it's delicious. Tonight is going to be pork chops, sauerkraut and mashed cauliflower.
I eat a big salad at lunch every day, so for dinner I tend to want cooked food. scrambled eggs, refried beans and pico de gallo is another favorite, easy meal. If you want to put it all on a tortilla it's good that way, but often I just eat it as is.

I go for vegetable stir frys with 3-4 oz of lean protein. I can mix 4 cups of different veggies in a tsp of olive oil with a little chicken stock and seasonings and then add the protein (chicken/fish/meat). Usually ends up under 400 calories and a lot of food. My favorite combo is broccoli, red bell pepper, zucchini, and mushrooms. It's delicious, colorful, packed with different nutrients, and easy to make. A ton of video recipes on YouTube. And the bonus... it's a one pot meal

What would you normally have for dinner ? Instead of new ideas, how about finding ways to make the meals you already make more healthy.
Something simple you can do to make dinner more healthy and filling is to include a nice leafy green salad. No iceberg lettuce. Try baby spinach, romaine or green leaf lettuce. Those have more fiber than iceberg. Add things like cherry tomatoes, slices of carrot, slices of pepper, onions, mushrooms, corn, black beans, chickpeas, slices of apple or pear.
If you don't want to have a salad, make sure you add 2-3 different veggies to whatever protein you're making. If you're having a pork chop, include a serving of peas, yams or broccoli. You want your dinner plate to have a lot of colors !! red peppers, onions, broccoli, yams/sweet potatoes, carrots, spinach, kale, chard, etc.
