Stir fry any fresh veggies in a little oil and a drop or two of sesame oil, add an egg and some soy sauce and there you go, Bob's your uncle emoticon If I have cooked rice, I add a little bit of that too.

I keep a bag of frozen stir fry veg just in case I don't have fresh.

Tuna mixed with a tablespoon of mayo, 2 tablespoons of salsa, a tablespoon of onion.
I heat and cut up a large low carb wheat tortilla.

Stronger, more powerful, I got this.

eggs used to be my go-to ...on top of spinach w/ cottage cheese, or sausage, or bacon & shredded cheese on top
But a food allergy test indicated that I shouldn't eat many eggs... emoticon

So my favorite quick & easy is a COSTCO rotisserie chicken w/ pesto + lettuce greens, tomatoes, peppercinis & avocado!

sauté vegetables, add a can of tomatoes or tomato sauce or marinara & serve over zoodles (or pasta)



the things I keep on hand for quick fix meals -
jars of pasta sauce (there are some healthy ones, you just have to read the labels. I stock up when they are BOGO)
canned tomatoes
eggs
potatoes
black beans

Wheat toast, avocado (or guacamole), a dash of black pepper, topped with a fried or microwaved egg and some Sriracha. Add an apple or banana on the side.

Quick chili: chop and sauce onion and pepper (and any other veggies), add a can of low/no salt tomatoes, can of low/no salt beans and chili powder. Cook for about 15 minutes and serve over brown rice. You can add shredded cheddar cheese, onions, jalapeño peppers to the top.

I also keep some boxed soups on hand and add veggies to those so that is even quicker. Look for soup that are low in sodium and high in fiber. Always keep brown rice on hand.

Persistence is more important than perfection.

Don't assume your freedoms are assured.

If you're not outraged, you're not paying attention.

I have had more than my fair share of homemade soup. You can take enough protein and veggies for one person and stretch it for several people. I find homemade biscuits work in stretching a meal too. Eggs are usually pretty cheap too.

@HAWKTHREE I love tilapia too. I like to top mine with a mayo/parm/basil/lemon mixture & broil...sometimes coat it in panko, sometimes just more parm & whole thing done in 6-9 min in the broiler. Healthy & yummy!

I always have veggies so a cauliflower pizza I can throw together with minimal effort. 10 minutes tops of prep! If I have my turkey pepperoni on hand (which I usually do...I use those, otherwise it's a veg pizza.

I also love sweet potatoes...so I'll bake or nuke one, throw on shredded cheese, salsa, chobani plain/nonfat (tastes similar to sour cream), possibly black beans or just a bunch of veg & throw it in a bowl! Yum.

Ready cut mire poix (onion-celery-carrots) sauted until soft. Then toss a tilapia filet seasoned with lemon pepper and saute until the flesh is white. For a fancy meal, toss some shredded parmesan on top. Practically 100 calories per serving.

Honestly, it's really rare that I have nothing healthy in my cupboard. I always have eggs, fruits and vegetables (fresh, frozen and canned), canned meat, etc available. Plus, I have several servings of healthy, homemade meals in my freezer.

warmed leftovers of healthy meals I cooked before - out of refrig or freezer. add a quick salad (maybe 3 or 4 ingredients instead of my usual 8 or more) to get some thing fresh

I try to keep my pantry stocked with healthy basics so that I will have enough ingredients to at least be able to make a salad, soup or sandwich.

My in a pinch sandwich is a can of tuna mixed with hummus instead of mayo. I will stuff it into a pita pocket with whatever green veggie I have on hand like parsley, romaine lettuce, spinach. I've been eating a salad every day, so I have plenty of veggies.

I can toss together a chicken soup in under 30 minutes. Chili in about an hour. although my chili tastes a lot better if I can let it stew for a good 3-4 hours. ;)

One thing that helps (when you have nothing) is having a good selection of spices. ginger, cumin, cinnamon, parsley, garlic, turmeric, fennel, etc can all be
used to enhance flavor. So, if you need to serve ramen, dump their spice packets and add your own.

Ramen and healthy usually do not co-exist. Too much sodium for this gal!

If I need to scrape together a meal for my family, I gather what I can from the fridge and pantry and either do a stir fry or a soup.

When there is virtually nothing in the cupboard, and you are unable to run out to shop, what do you do to pull together a meal that conforms to your sparkpeople plan?
