Back on Track

OK, yesterday I went to the grocery store and stocked up on veggies and ingredients to COOK with! Today I made a pot of lowfat broccoli/cauliflower soup to snack on this week (or maybe freeze for lunches when I go back to work) and some chicken and dumplings, light, for dinner. I put 2 scoops in my bowl and didn't have seconds. Last night it was fajitas with fresh bell peppers, onions, and chicken breast meat (and my fave marinade, DL Jardine's). It feels good to COOK healthy, real food for a change! I think it's time to invest in a small freezer so I can cook in bulk and take it to work for lunches and have it available for healthy dinners if I am too tired to cook.
