made some good choices today

So, my husband decided to get Mexican food for supper tonight. I wasn't realy happy with him to start with, but I decided to make the best of it. Since he picked it up I could make some substitutions and still get the "meal" I wanted. We got fajitas, so I used a La Tortilla Factory tortilla istead of what the resturant sent, Tostitos Light chips instead of the chips they sent and I just ate the rice instead of the rice and beans(they were refried so I figured they were probably cooked in lard). All of the things I ate weren't exactly GOOD for me, but they were better choices than I could have made. I'll take that and call it a good day!

    One of my favorite things to get at a mexican resturaunt is "Tortilla soup"....its usually pretty low on the calories too. :o) Here is the muffin recipe I love: Here is the muffin recipe: "Six Week Muffins" 2 Cups boiling water, 5 Cups bran, 5 Cups whole wheat flour, 5 tsp baking soda, 2 tsp cinnamon, 1 1/2 tsp salt, 1 Cup wheat germ, 1 Cup oil, 1 Cup honey, 4 eggs (beaten), 4 Cups buttermilk....Pour boiling water over 2 cups of bran in large bowl; let stand for several minutes. Sift flour, baking soda, cinnamon and salt together (I never sift...I just stir it together). Add wheat germ and remaning 3 cups bran. Add to wet bran, stirring until moistened. Stir in oil, honey, eggs, buttermilk and fruit. Spoon into greased muffin cups (I use an ice cream scoop to do that), filling 2/3 full. Bake at 400 for 15 to 20 minutes or until muffins test done. Store in refrigerator and use as needed. May substitute brown sugar or molasses for honey and add 1/2 cup dates, raisins or chapped apple (or many other types of things). Yield 48 servings. Approx calories per serving: 139.
