Spring Challenge 2021

I am a little late starting the challenge. Just a little. I have fallen off the plant based wagon temporarily. My Birthday was the day before the challenge started and we camped with friends the whole weekend. Enjoyed some Jambalaya and white beans made by a good friend and a Chantilly cake bought by his wife- a good friend. Good food and drink. Today I got serious. Clean eating, lower calories. Signed up at planet fitness. I hope to make some progress this challenge. As a couple we have been eating lighter portions and more chicken than red meat. DH grilled 8 pounds of chicken breast that had been marinating in italian dressing. We let it cool and put each piece in a ziploc sandwhich bag and then put them all in a freezer bag. So handy. They are great for salads, sandwhiches and in an entre. I have about 8 one serving plant based meals in the freezer- each contains a whole grain and a plant based protein. There is white beans and rice, blueberry oatmeal with walnuts, black beans and mexican rice, New Orleans style beans and rice, etc. I am going to reduce my animal based meats again. I like the food and it is healthy. Cutting back on empty calorie treats also. Hope everyone had a great Easter. Lola emoticon emoticon
