My GF Banana Oatmeal Muffin Recipe

1 cup sugar
1/2 cup (8 Tbsp.) salted butter (room temperature)
4 mashed bananas (very ripe bananas)
1/4 cup vanilla almond milk
1 cup good quality gluten-free flour blend
1 cup oatmeal flour (you can run uncooked oatmeal through a blender until it becomes flour)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
•4 drops vanilla extract (real vanilla)
•2.5 shakes of cinnamon
Preheat oven to 350°.
In a big bowl, cream together the sugar and the room temperature (slightly soft) butter.
Beat in the eggs one at a time just until mixed in.
Add the mashed bananas and almond milk and mix well.
Whisk together the gluten-free flour blend, baking powder, baking soda, salt, vanilla, and cinnamon.
Use avocado oil or peanut oil to lightly coat the muffin tins.
•Spoon the batter into the muffin tins.
•You can top with nuts or chocolate chips (Like I do sometimes) or leave them out too!:)
•Put them in the oven for about 10-15 (Don't go too far, they can burn quickly!)
•They are done when the fork/toothpick comes out clean from a down the middle poke. Or you can smell/eyeball it like I do.
•Let them sit for a few minutes to firm up outside of the oven, away from heat.
•They come out the tin easiest with a little patient coaxing of a small spoon around the rim & sides. :)
(This recipe is tried and true, don't overbake or over mix. Whatever you do don't whip the batter too much!:). Adjust the cook time for your oven and altitude.
**If your gf flour mix should have the x-gum in it.**
