Bread Recipe Secret ;)

Y'all asked for it, so here it is! The link to the Amish bread that I am currently enamored of and the tricks I'm using to make it extra light and fluffy! Here is the link to the recipe I use:

I follow the recipe ALMOST exactly, with the following exceptions:

Add 3 Tablespoons of yeast, that is right THREE!! And be generous! (I order mine in bulk off Amazon or get it at Costco!)

When warming the milk/water combo, I don't take the temp, I use my finger (after hand washing thoroughly!) and make sure it is a little above room temp (because the mixing bowl is going to take away some of that warmth when you pour it in) and then whisk in the sugar and yeast really good (to let in air) and let it sit a good long while till it gets a good foamy head. How long? I lost track of time, I don't know. But more than 10 minutes, I'd say at least 15 or more.

Add 2 tsp of salt. This is only a little more salt than is called for, but it really brings out the flavor.

That is my secret! Other than that I have followed the recipe exactly, and it turns out beautifully! For Thanksgiving I'll be cutting it into fist sized pieces and making rolls out of it! I've told DH that I'll do the same and make hamburger buns out of it too, and he can't wait! I've shared this bread with a few people and they are in love with it. I've kept the recipe a secret, but I'll share with you guys emoticon Just don't eat too much! I only eat a half a piece at a time as there is so much sugar in there!
