Sunsets, NSV, and scaled-down Thanksgiving

We had beautiful sunsets over the past few evenings. Here are views from my porch.
I have been struggling with a weight plateau lately. So I was thrilled do you have a non-scale victory today. I had my annual health check in, and my blood sugar was in the normal range for the first time in over 10 years. My prior results were in the pre- diabetic range. And my cholesterol results were excellent which is another positive change. I am thrilled with these results.
I will be having a very different Thanksgiving this year. Normally I drive to San Francisco and Oakland to spend time with family. This year I am not traveling because of the pandemic. And I will be avoiding crowds, restaurants, and get-togethers indoor. I am not certain exactly what my plans will be; I will attend an outdoor cold weather potluck get- together if one of my friends hosts it. But I will most likely be staying home. I was pleased to discover an easy one pot Thanksgiving meal by Elizabeth Yarnell, author of “Glorious One Pot Meals”. The menu as written serves two, Of course it can be doubled or tripled for a larger group. Anyway, I thought I would try to share the link just in case any of you are in the same boat, and planning a scaled down holiday meal.

I have not made this recipe, but I have made several other recipes from her cookbook. Most of them are very good.
