Can someone please help me enter a delicious low carb, low salt and diabetic friendly meal? 4 pounds of fat removed pork loin, 32 oz cabbage slaw, 2 sliced celery rib & carrots with 32 oz of low sodium vegetables juice/or fresh squeezed tomatoes or low sodium veggies stock or what you have on hand. Cook 350 for 3 hours or till meat thermometer reads pork setting which I think is 170 - mines automatic for grill. Take out roast. Let cool.for 20-40 minutes. Sliced and pulled apart with forks. Serves lunch/supper 20 oz serving size (8) or lighter eating not working farming or ranch 10 oz (16). Have done with smaller pork roast of at least 1 pound and varied amounts or cut up vegetables to match what I have on hand. Best voted name is Honky Donkey Porky and calorie plus nutrition count not known at this time. Texas sides are hot sauce, cilantro, salsa, Pico de Giao, avocado, guacamole, light sour cream, salt, pepper & real hotter peppers and creative what you want type or we have on hand/leftovers. I enjoy 2 tbsp of garlic, Italian seasoning and Mrs Dash on mine.
