refining meal prep

I have always loved food, and I'm getting better and better at recognizing portions and getting a good feel for what's appropriate and how to measure. We went on an outdoor picnic with my brother and SIL yesterday, and they brought take out. I ate some, I was intentional, I got home and entered it, and I was only 5 over my fat macros, but within range of everything else. I felt good about being able to make balanced choices.

Now I am working on refining our home pantry and kitchen. I cook a lot, and I need to have a better plan and pattern for dinner. I am making 3 two week plans that I can rotate, that use similar ingredients, so I can shop non-perishables for 6 weeks at a time, and then only go 1 x a week for produce and proteins. I would love to have those posted on my fridge so there is NO thought about dinner, just making it. I also love crockpot season, and I make a ton of soups and roasts that just simmer all day. Today is a squash soup from our garden with veggie broth, a touch of coconut milk, ginger, and cayenne. I serve it with roasted cauliflower and the boys usually eat a grilled cheese with it.

I now want to get these recipes out of my head, onto paper, and into the rotation so I have more say over my evening eating. I also am streamlining my grocery shopping, because I CANNOT stand roaming the isles. I have my stores maps down in my head, and can usually get in and out within 20/25 minutes. I am also finally pulling up my summer garden and putting in winter veg this week. It's been so weird with the weather this year, it's finally cooled down enough for the winter veg to go in!

I am having anxiety about the upcoming election, and keep on meditating, visualizing, and volunteering, and I voted. There is not much more I can do, but I do not want another 4 years of the pain we just went through. I will keep on trying to stay balanced, and have plans to exercise my anxiety away, rather than try to eat it away:) The eating didn't work anyways.

    Sounds like you've worked out a good food management plan. I'd love your recipe for the Crockpot Squash Soup. I always love a good soup. I also love food and love cooking and cookbooks and cooking magazines and online recipe searches and menus and everything food-related. emoticon

    I've got my fingers crossed for your country and the upcoming election. I cannot imagine how stressful it is to actually be living with it. Even though I'm a Canadian, I'm still very worried for all my American friends and relatives. emoticon

    I voted via absentee ballot with my family. MD actually sends confirmation of receipt. YAY! I feel good knowing that it’s done. Great job being mindful at the picnic. We have to do this in real life so you might as well practice. The garden sounds wonderful. I have always wanted one and never done it successfully.     I love your organized approach to meal planning. I keep telling hubby I want meal plan for the week and shop for just those meals the week prior. We do curbside pickup only. But alas, we are bulk shoppers and I usually decide the day’s meals the morning of. I mostly fly by the seat of my pants when it comes to meal planning and would love to be more organized like you.

    I usually go to the produce market and get whatever looks nice then make a meal plan for the week and only go to the grocery store once. I didn't realize how much it was helping me until I DIDN'T do it that way this week! Back on it next week...
