Keeping it simple...

Hello my friends.. well I definitely made up for my lack of movement Friday.. intense #tullytime #cko class, some creative cooking, a walk to plant a rock at my friend's house, a walk up to the local restaurant to listen to a band and when all was said and done close to 10 miles logged.

This morning I realized I had not written in my daily gratitude for a few days..and I realized the day I had stopped, I had begun to think I have nothing new to say.. this seems redundant.. well this morning, the light bulb went off.. we do not have to be creative in what we are thankful for.. it doesn't need to be something new and "exciting", because we must embrace the every day moments, we must be thankful for the most basic of things, which starts with waking up each day.. so I spent some time thinking back over my week and adding 5 things each day for the days I missed...

Sometimes inadvertently I put too much pressure on myself to be creative (thanks Dayna for that thought).. case in point, my butternut squash challenge.. I hvae made some awesome meals and will share a picture montage when it is complete.. still have a few more meals to be made.. but I digress.. the thing is I have not made basic roasted butternut squash, with a little evoo and thyme for a simple side dish yet because I was looking for "special" .. so tonight that will be the side to go with pork chops.

I've been eating like a queen and probably a little more than usual and the kicker is the scale is dropping daily. I have been doing the yo-you for months now up one day, down the next.. but the scale has gone down 4 days in a row now.. so I'm interested in seeing the end result.. which brings me to my next thought.. how I LOVE when people say to me.. If I ate like you, I'd be fat.. nope, no you would not.. because healthy can be delicious and amazing if you are creative or even if you KISS (keep it simple silly)...


Yesterday was a "first" day for Ryder.. his first christening and his first ride in a swing.. my son sent me video.. he actually seemed to like it.. you've seen his reactions.. sometimes he in unimpressed... So here is a shot of his whole outfit yesterday and his first ride in a swing.. Gosh I miss him so much.. need to set another visit.

Have a fabulous day.. Going to walk to and from church this morning, then make some fresh escarole and bean soup and a loaf of bread for lunch while I torture myself.. (it's not easy being Green... sigh).

    My favorite squash is baked, oil, salt and pepper. I also love chili or a loose egg on top.

    I do better with a recipe...
    but too often I start off to make a little something...
    and by the time I am done creating that wee little meal..
    (a bit of this, some of that, and hey this would be good in it too.. etc.)
    it has grown way out of control....
    and then I am eating that wee little meal for several days...
    and that is if I get some help to eat a few portions, too !
    you see, it was supposed to be 2 maybe 3 servings...
    that grew into a dozen or more.
