Mediterranean, Anyone?

I'm looking at a 30-day Mediterranean Diet Challenge.
Starting tomorrow, I'm going to be shopping, cooking, and eating from a pre-planned menu. This will give me a better understanding of how to cook healthier and not rely on microwavable meals.
I do have a little bit of experience cooking, but there's a fire extinguisher in the kitchen, just in case something goes wrong. I haven't needed to use in in the 12 years that I've lived in this particular house, although there were some slightly close calls during the first 5 years.
I have the menu and shopping lists printed out and I'm looking forward to giving this my best efforts.

    I love Mediterranean. I was doing Atkins, but eating chicken every day elevated my ldl. I love Italian and Greek food. I don't need to loose weight anymore, but still cook this way. I eat pasta now the Italian way lol, as an accent to the meal 😁
