Well I am always looking for something new to cook. I love introducing new taste into our menus. We were waiting on the storm to pass us yesterday. I just made a pot of midnight beans with sauted onion, carrot and celery. When they were soft and almost done, I added a can of rotel and a can of petite diced tomato to the pot. Hubby made a skillet of cornbread and that was our dinner yesterday. There is enough of this left to have again another night this week.
I am planning on making a shrimp and pasta dish for tonight. I know that Hubby will like this as it is one of his favorite at a local restuarant. I can make it for both of us at about half the cost as he pays for this meal.
We also have some pork roast left from Sunday afternoon so I will look for a way to incorporate that into another meal this week. Not sure what I will do until I chop up the potatoes and carrots and add some onion and cube some of the roast to make a casserole.
