Well I am always looking for something new to cook. I love introducing new taste into our menus. We were waiting on the storm to pass us yesterday. I just made a pot of midnight beans with sauted onion, carrot and celery. When they were soft and almost done, I added a can of rotel and a can of petite diced tomato to the pot. Hubby made a skillet of cornbread and that was our dinner yesterday. There is enough of this left to have again another night this week.

I am planning on making a shrimp and pasta dish for tonight. I know that Hubby will like this as it is one of his favorite at a local restuarant. I can make it for both of us at about half the cost as he pays for this meal.

We also have some pork roast left from Sunday afternoon so I will look for a way to incorporate that into another meal this week. Not sure what I will do until I chop up the potatoes and carrots and add some onion and cube some of the roast to make a casserole.

Sounds good! I'm not much of a cook, so I can't help emoticon

Good to try new recipes. Maybe with the left over pork, try some new version of tacos with pork instead of beef or chicken.. Though, casseroles are always good. Enjoy your day.
