Main Dish Salad #15 - Simple Tuna Salad
Saturday, August 01, 2020
That's what Jane Brody calls it in her 1990 cookbook, Jane Brody's Good Food Gourmet. She was big on low-fat, high carb eating, and touts the fact that there's no mayo in this salad.
I wasn't at all impressed. I'd rather have mayo in my tuna salad, and something like lemon juice or dill pickle juice to give it a bit of sharpness. But here's the recipe, anyway.
SIMPLE TUNA SALAD
(adapted from Jane Brody's Good Food Gourmet)
1 can water-packed tuna, drained
3/4 c cottage cheese (I used full fat)
1 green onion, thinly sliced
1 rib celery, finely diced
Mix it all together and eat it however you usually eat tuna salad. I served it over a couple of cups of lettuce and half a tomato, and sprinkled an ounce of sunflower seeds on top.
