"Knee-High in July"

One of the pluses from all these sunny and hot days is that our sweet corn
will ripen earlier this year. You can see that it's more than "Knee High in July."
Here in S.W. Ontario, the fresh, sweet corn will soon be ready for harvesting.
Whether eaten right off the cob or used in many wonderful dishes, corn’s crunch and
sweet taste still tops as one of our all-time favourite vegetables.
Corn is low in fat, low in sodium, cholesterol free and a good source of vitamin C.
When purchasing look for a husk that’s firm, fresh and green looking.
Don’t strip it; just look at the tassel or silk.
On really fresh corn, the tassel will be pale and silky, with only a little brown at the top.
Can't wait for our first feeding, along with some of our heritage tomatoes.
