So I hope you all are having a Happy Mother's Day. Today, has been great and many blessings from my children and wishes from everyone.
Now to this meal: Last night, I cooked fresh kale washed three times and fried it in smoked sausage and olive oil with a little canned tomatoes that were diced. I used a no salt seasoning in it as well. I bought the no salt seasoning at Dollar Tree. It turned out pretty well. You can use a small amount of bacon if you want more flavor. I didn't have bacon so that was out. On the side, I had skim milk about 8 ounces and on the side a serving of unsweetened applesauce. I was so full after. I ate at 5 and have been more consistent with hourly meal time.
Breakfast consisted of fresh strawberries, vanilla Greek yogurt, low sodium V8 juice and Green tea with pomegranate flavor by bigelow. It had a little caffeine but is much better for you than coffee. When I have too many strawberries I pull off the green leaves and wash and freeze in a ziploc. For a snack, you can put frozen fruit in vanilla yogurt and it makes a cold ice cream like desert. Greek yogurt comes in a large tub very inexpensively at Walmart and is packed full of protein. But this was breakfast. No cooking involved.
I had a quick lunch today because I was busy with household things and my daughter was working today. So, I didn't feel like a very obnoxious meal. This was pretty quick and relatively inexpensive. I cooked frozen vegetables in the microwave, put 2 slices of american cheese and some of that no salt seasoning. I used a third of a bag of frozen vegetable that I bought at Dollar Tree. I stirred until the cheese melted and voila!! A boiled egg on the side that was boiled days ago. And a cup of orange juice. I suppose water would be fine but had some orange juice on hand for other thing that I haven't cooked yet.
I just have to admit I'm so full right now but maybe I could have done without the skim milk. however, I had a half a can of green bean, half a can of corn, a little kale from the bag I bought at publix. The kale was from a bag that I used a serving from yesterday. Still a lot left!!! The green beans and corn canned go a long way and are only 50 cents from Walmart. The leftover I put in the fridge and use for another meal down the road. Of course spaghetti sauce and some whole wheat pasta that I froze in a ziploc a long time ago and put in the freezer. I don't like to waste food and I saved it and good thing. it was an easy dinner with little fuss. You can put cheese on the whole wheat penne but I just used about a Tablespoon of parmesan.
So, I hope this fits on the blog!! a lot of info!! I really want to be helpful but I hope this inspires some ideas for you all!! All of the food here is realtively inexpensive and goes further than some choices. I am extremely full and blessed that I do have food to eat. I really hope all of you and encouragement is accepted.
