End of Keto week one... the good and the not-so-good

I felt really good and satisfied with the low carb food plan thru Day 6, although I was in desperate need of some new recipes to alleviate the boredom.  But a busy schedule and lack of supplies for most of the Keto-friendly recipes prevented me from doing a lot until I had more time.

Then came Sunday, Day 7 for me.  Let me back up a little and say that the reason we started on Keto when we did was because of my faith's Lenten season:  DH and I both give up alcohol for this 40 day period.  So adding this low carb way of eating seemed like a good add-on at this time.  Well, we don't consider Sundays in this fasting, so on Sunday evening I had 2 glasses of champagne (the bottle was already open and sitting in the back of my refrigerator).  OMG, did I get sick afterwards!  Now I believe the warnings that your tolerance for alcohol goes way down when on a Keto diet. It's Tuesday and I still feel nauseous, shaky and have extremely low energy.  But it turns out that this may be a double whammy, since this is the time that people new to Keto may get the "Keto flu".  And, by golly, I believe I have me a case of it now.  Part of me wants to quit right now, but the larger part says to stick it out, things should get better in a few days.

My blender was broken and a new one just came in from Amazon.  Going to peruse the recipes and fat bombs to see what might strike us as hitting the spot over the next few days.  I think one of the first things we'll try is cream cheese waffles/pancakes.  Here's a recipe for them, supplied by Sparker NIGHTSKYSTAR:
2 eggs
2 ounces cream cheese
1/4 teaspoon baking powder

Whiz in a blender or magic bullet, then cook as usual in a waffle iron. Makes 1 serving of about 6 small size waffles. You can also use it to make pancakes..if you don't use an egg ring they will be thin but delicious

    I was lucky as I was already doing a low carb diet before I decided to go Keto, so I had very little “keto flu” and it didn’t take long to get into keto sis. Thank you for the recipe.

    Yes, my wife was ready to send me to the hospital when I became almost incoherent after a number of glasses of wine years ago. Tested my blood sugar and it was OK, not a diabetic coma but ...

    But alcohol is a poison. That doesn't mean I don't drink any, I do, but ...

    But as a poison your body is designed to deal with it first, before carbs, before, fat and protein. When you eat Keto your body becomes surprisingly unfit and dealing with alcohol. Net result ... old quantities of alcohol that you used to drink hit you much harder than before.

    hope you enjoy the waffles..i love them!! add some bacon on the side and you have a great keto meal!!

    and yes..i am good for one small drink..and i'm toasted with that. i have it very seldom..one at christmas one on new years and more than one when my grown kids come and we play drinking games...and i lose. bigtime.
