A very long time ago in Havana, while trying to survive an epic hangover and allergies brought on by air quality (the "Cuba cold"), I had my first Cuban sandwich. It's a ham and swiss with spicy Cuban mustard and pickle slices, and it was so good!
Twenty years later, I was living in Florida and the Publix grocery chain had the hookup for Cuban sandwiches. Or, you could go to any number of little Mom and Pop places and the real deal would appear on your plate, hot and flat and dripping with undeniable deliciousness.
Today, I caught a wild hare and thought it might be lovely to make some Cubans. A panini press would probably be more elegant, but I'm just going to toast some bolillos and throw everything together under the broiler for a second, then add the pickles. It's tasty and nostalgic and surprisingly easy on the calorie budget!
I would encourage anyone to give it a try, just do a quick search and see what wonderful results you get!
