Some thoughts on my Mediterranean plan (Eating Well 30 day plan).
I'm eating foods I've avoided. Complex carbs.
I'm eating more seafood.
I'm eating enough to keep me full. Perhaps that's the cold talking but I'll let the food take credit!
Cooking for the week and portioning meals is nothing new; the recipes are new!
This is a spaghetti squash lasagna which did not fit in the squash shells per the recipe. Perhaps it was very compact squash! It worked out just fine in the casserole dishes.
I've had some interesting combinations of food that I'd not thought to match and it's been satisfying.
