In health and vegan circles, there's an ongoing debate about crock pots vs Instapots. Which one is the best and most well-used?
I say: drop everything right the hell now and get an immersion blender!
I started off hardly using mine - mostly for quick and easy hummus. But slowly, I started experimenting with blended soups.
Squash soup, carrot soup, "cream" of celery (raw, soaked cashews is the trick here.)
And last night, I did sort of a quick and dirty "everything in the produce bin" soup. Onions, carrots, parsnip, celery, turnip - chopped, sauteed, cooked in broth with a couple of cans of pinto beans and spices for about 30 minutes, and blended up. No recipe, just filling, healthful, superfood bowls of warm, tummy hugs.
And you know, I'd take a photo, but the one thing blended bean soup does *not* do is look particularly appetizing.
Speaking of whips and nae nae's, this feline bounced and danced crazily around the house enough to get 30 minutes of indoor activity! Yay. Will I today? I'm inside for the nonce, regardless. I'm a sand cat, ma'am - not a snow cat.
