Waiting for the Drop

I've been working my way through the low carb recipes here on spark. There's 33,328 of them, so it will take some time. emoticon

Tonight I made pizza for dinner. I found a recipe on spark for a low carb crust, then tweeked it to make it even lower. It calls for just cheese, eggs, and seasonings. It turned out fab! Hubby even liked it, and we talked about how it would go well with different cheeses for different meals. It was super filling, and even though I could have eaten all 8 pieces and still stayed within my carb range, I was stuffed after 3, and probably would have been satisfied enough after 2. The leftovers should warm up well as there is nothing to get soggy.

Talked to my RDN and she upped my carbs to 100 a day, but still no more than 30 at any meal. She did that to make an allowance for my fiber supplements that I'm required to take that have carbs in them. Makes it a bit easier. I don't know how long I'll have to eat this way. I'm sure it depends on how long it takes me to get and stay healthy. Heard from the surgeon, and I'm scheduled for Feb 10. He's supposed to call again on Thursday to let me know if they are going to take care of everything in one surgery or if I'll have to have more than one. I have 2 hernias that need to be repaired, but they may take my gallbladder out as well since it is full of gallstones. I also have nonalcoholic fatty liver disease and ground glass opacity in my left lung base. Don't really know what that last part means, but I'm hoping he'll explain it on Thursday.

I'm trying to make myself a list of meals that stay within my guidelines so that when I'm planning my menus I can just choose a meal from each list and know I'll be safely within all my numbers. Time consuming now, but it will save me time later. I can add to it as I go. Such a blessing that I have this time off school to get a handle on things. Next week is back to the grindstone.
