Leftover turkey recipes

We look forward to the leftover turkey after Thanksgiving. It's delicious in sandwiches, salads, and soups. It can shine in pasta or stir-fry dishes.
I plan to make a spinach, turkey, pomegranate and apple salad for lunch today.

Just before Thanksgiving, I found a recipe online for Chicken Spinach and Mushroom Low Carb Oven Dish (Recipes by Bohemian - Cookpad). It was easy to substitute leftover turkey for chicken in this recipe.

I didn't see nutrition info entered on the site. According to Spark when I ran the original recipe through the nutrition calculator (using skinless boness chicken breasts), the calories were 239.3, and carbs were 5.0 per 1/8 size serving of a 9x13 dish.

I started with a layer of leftover turkey, splashing it with a little organic chicken broth so it wouldn't be too dry with more baking.
I covered the turkey with a generous layer of baby spinach, topped with a single layer of sliced fresh mushrooms, sprinkled with a light amount of pepper and Zesty garlic and herb seasoning.
In a bowl, I whisked together the container of green onion cream cheese, olive oil, and organic chicken broth. I poured it over the layer of mushrooms. It won't completely cover everything. Then I sprinkled just enough mozzarella cheese to lightly cover the dish.
I was able to adjust the cooking time downward since I was using pre-cooked turkey meat instead of uncooked chicken.

It made a delicious Sunday dinner. It was lighter than most cheesy casseroles.
