Pumpkin Muffins

For those that asked:

Pumpkin Muffins

1 cup Flour
3/4 cup Whole Wheat Flour. I have used all just white flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon pumpkin spice, I make my own, recipe below
1/4 teaspoon baking soda
dash of salt
1 beaten egg
3/4 cup fat free milk
2 tablespoons butter, melted
1/2 cup pumpkin
Nuts (optional)

oven 375. Lightly spray muffin tins with cooking spray. (I use paper cup so don't need to spray)
In large bowl add all the dry ingredients and stir until mixed. Make a well in center. In a small bowl mixed together milk, egg and butter. and pour into well and stir just until moistened.
Spoon into prepared muffin cup, filling about 2/3 full. Bake for 15 to 18 minutes, or until a toothpick comes our clean. Cool about 5 minutes and remove from pan, and enjoy. Makes 12 muffins.

Homemade pumpkin spice

4 teaspoons Cinnamon
1/2 t. cloves
1 teaspoon allspice
2 teaspoon ginger
1 teaspoon nutmeg
Use according to recipe.
