Today was shopping day - as our daughter was out with her worker I was able to go with hubby to Walmart to do this (was nice using my new walker and got in 1,200 steps !!)
We got some frozen broccoli and cauliflower to add to some green pepper and then we will experiment with roasting them trying different spices and have found a 'healthy sauce' that we can also try over them Hubby isn't interested in trying asparagus but am hoping to go and get a few spear and see what I can do with them. My sister made them with little cheese wrapped around them so might give that a try.
Also got another bunch of spinach for my protein drink so that helps add vegetables to the day. Am going to try broccoli in the protein drink and see what that tastes like.
We have spiralizer so am looking at doing a zucchini with it and then putting my homemade sauce over it.
So I do have a few options to try. Need to do more research on the different squashes to see how I might be able to incorporate them. Hubby is not really interested in them but we will see how that goes.
I have a large pot of vegetable soup made and ready for the next couple of day - we spice it up a lot and make it with vegetable broth, and tomatoes that we juice. We have served it to one of my friends (she usually goes walking with me) and she loves it though sometimes we go a bit overboard with the hot spices so we need to watch that especially if friends are going to have some as not all people like things 'hot'
Was a good day for meeting my daily goals so am pleased with that. Am planning to make some hummus to use with the roasted vegetables. Am also looking at working on having one meal a week without meat - we normally eat chicken mostly with a little beef. When we went shopping today we bought some cod so that will be one of the meals for the week. With beef I am finding the my digestive system just doesn't seem to tolerate it like it used to. So we are really cutting way back on that. One day this week though am going to make a meatloaf with beef but think that next time we will use ground chicken or turkey. And am hoping to make a large pot of chili as that can be freezed and heated up when we just feel a we want to have a easy day of cooking.
Gosh this vertigo is just bugging me terrible. I know it is improving but it just seems to come one suddenly for 1/2 hour and then goes. Read up on it and it said one thing that could bring it on is being dehydrated so am going to have to start drinking more - am up to 60 oz a day but I see I am going to have to get it up to 90 oz. So that is another goal I will have to continually work on until it is just a habit.
Three things I am grateful for today are
(1) grateful that I have been able to start a collection of new recipes to try with respect to incorporating vegetable - am seeing that I can learn to love them - part of my mindset to change
(2) grateful that I was able to get more white yarn for the next baby blankets I make. Looked up a pattern for crochet slippers - my dear mom used to knit them with pom poms on them but I don't put that one them - needing to make some as the floors are starting to feel cold
(3) grateful for the sense of hearing - was able to hold a new born baby on Sunday (6 weeks old) and she 'cried' a little - though we rush to sooth them there is something so special to hear that little voice calling out to 'mom' for comfort

Part 1 Port Hardy to Port McNeil Vancouver Island BC, 27 miles
Part 2 Port McNeil to Campbell River Vancouver Island BC 17 miles = have completed 1 mile
It is now 10:50 pm and I am tired so am going to say
