I made a quick trip to the store this afternoon and came home with the makings for rainbow veggies.
It's not as colorful as I'd like, because red/yellow peppers were expensive so I used green. This one has carrots, celery, cauliflower, cucumber, and peppers. I try to vary it by getting a few different veggies whenever I make it. I cut them up as soon as I get home and put them in a ziploc, ready to go..
I grab it by the handful (instead of popcorn), add it to lettuce for a quick salad, or eat it with a dollop of cottage cheese or hummus. In the winter I add it to a stir-fry or soup. I take a small baggie to work for an afternoon snack. The crunchiness and variety of flavors make it very satisfying. Tonight I'm having a plateful with tomatoes, sprinkled with tajin.
The only problem is that the kids want some, too, so this batch won't last very long, but tomorrow I'll go to Winco and get more veggies (for a cheaper price).
