Day 234: It’s a Salad

A while back I got a cookbook from a Youtuber I watch. I’ve made several different things from her channel and we have loved everything, and I knew I needed to get her cookbook when released. The cookbook is “The Domestic Geek’s Meals Made Easy” by Sara Lynn Cauchon. What I love about her channel is how simple everything is. I skimmed through the cookbook and would show my Mom the recipe and this one jumped out at her. Her Youtube channel is The Domestic Geek, check it out.
BBQ Chicken & Pineapple Salad
2 boneless, skinless chicken breast
2 tsp. vegetable oil
Salt & pepper
½ pineapple cored and sliced into rings
2 TBSP. barbecue sauce
4 cups chopped Romaine lettuce
1 cup cherry tomatoes
½ cup deli ham
1/4 red onion
¼ cup ranch dressing
So, I changed a few things up because I didn’t have everything in the recipe. The star of the recipe is the chicken and pineapple. I just made a big salad with some radishes, carrots, and celery because that’s all I had.
I grilled the pineapple on both sides about 4 minutes each side. I put those on top of the salad. I then grilled the chicken around 6 minutes each side and brushed the barbecue sauce on it.
I threw everything together and there was dinner. It was yummy. You all know I’m not big on onions, but maybe next time I’ll have some set aside for my Mom to add to her salad. I did make a big salad and you all know what’s for dinner tonight.
