I got a reply to my post of yesterday from someone stating I was heavy on carbs in my 3 days I set out. Well yes, todays was heavier in carbs with the chicken and dumplings. But when I make them, I put in chopped carrots, celery and green peas when I am cooking this. These are 3 veggies I am not really fond of but we use a lot at our house as I incorporate them in so many of my dishes to make sure they are inured in our food plans. I have never cared for carrots or celery since I was a child. But We use at least a pound or better of carrots every week or so and the same amount of celery. I have never liked green peas either, but we use quite a few of them incorporated in recipes that do not necessarily call for them. They go in my soups, stews, etc. My dish had as much veggies as dumplings My Tuesday pot of beans will be from dried beans made with chicken broth onion and spices. I do not think they have that many carbs. And Wednesday will be a sheet pan of Italian mild sausage with cherry tomatoes, onions, peppers and spices along with a salad. No that many carbs in this one. Now Thursday will be a different story as Hubby wants to go and get pizza. We usually get a medium and I eat only one piece and Hubby 2 to 3 and the rest is brought home for his lunch the next day. There was a time when he and I would order and extra large with everything and eat it all in one setting. No more of those days.
