Meal prepping for the week can be daunting for the uninitiated. I suggest starting small, such as egg roll in a bowl. Skinnytaste has a good one. Google her.
The secret is to start small so that you are not overwhelmed. I suggest finding a favorite recipe and making 3-4 servings for lunch. Store in plastic containers that can be used in the micro.
It doesn't take a lot of $$$ but it does take some planning. When life gets busy, you have a healthy meal at your fingertips and don't end up grazing on junk.
Egg roll in a bowl with ground turkey and a bag of coleslaw. Added edamame and garden broccoli.
