Cooking Challenge #11 beef enoki mushroom rolls #12 shirataki noodles

When we go out for sushi, one of our favourite cooked dishes is beef enoki rolls, so I was very excited to try to make them at home last night. They were very easy and fun to make. The portions were quite small, 280 grams of meat (about 10 oz) split between the two of us. These will definitely be a family favourite we'll make often.

Both hubby and I have problems with soy, so I wanted to try a miso soup without it. I've seen the shirataki noodles in our local grocery store for ages and finally bought a package to try. They were really delicious! 0 calories per serving with 3 grams of fiber is beyond belief considering how delicious they were. And so very easy to prepare as they just microwave for 1 minute and then rinse. The miso soup looks a little strange as I ran out of white miso and had to also use some of the red that is generally used for grilling, but it really tasted good. These noodles are expensive, but they are going to be a staple at our house from now on. I can't believe I waited so long to try them!

Tomorrow after my medical appointment we are going to the largest Oriental grocery in Ottawa that was bought out by the PC chain (No Frills, Canadian Superstore, Zehers, etc) so I should be able to pick up a lot of ingredients for future meals.
