And my obsession with vegetables continues...but that'a good thing

Dinner last night, lunch today. Vegetable curry w/cauliflower, sweet potatoes, zucchini, mushrooms, and chick peas. With quinoa.


Soup I made in slow cooker this morning, before I added pasta for 15 minutes. I had a bag of frozen vegetable leftovers and some fresh leftover veggies. I tossed in slow cooker with a quart of organic veggie broth and a small can of tomatoes. Garlic and onion powder, salt and pepper.
The pasta I added was Barilla hi protein elbows, 17 gm protein per serving. These have powdered lentils and legumes added, and they actually taste good.

Watching this right now. First episode available until this evening, when 2nd episode is aired. Documentary to health from obesity and diabetes. I get these links from Forks Over Knives. All my vegan heroes are in it: Joel Fuhrman, Neal Barnard, and Michael Gregor, to name a few. As it begins, Jon McMahon, the focus of the documentary, is obese and diabetic, but there is also photo of him now, and he is trim, energetic and smiling. There will be 9 episodes that follow his path to health. I intend to watch, as each video is free for a limited time.
