That’s the word my husband invented to describe our lunch yesterday. As photographed above. I made Aldi’s Soy Burgers with spinach, veggie mayo, tomato slices; sweet potatoes, and red cabbage coleslaw with an Asian/poppyseed dressing. We had homemade iced tea, unsweetened, and we split a white nectarine and plum. We ate outside on our patio. I precook sweet or white potatoes in the microwave, then pan fry in my nonstick pan with a tbsp of Smart Balance. I tried giving up cooking oils, but was unsuccessful. Now I just limit it, using only a tsp or tbsp.

For breakfast this morning I made a combo of polenta and cream of buckwheat cereal with blueberries and a couple of pecans broken up on top. That was good, too.

Yesterday I had no snacks, but became so hungry prepping dinner that I ate unplanned cashews and walnuts. I will have to drink water and eat either an apple or raw veggies next time. Maybe herbal tea, like I do at work. I’ve come to realize that it’s not a matter of “maybe it won’t happen again”. It’s more realistic to plan for an alternative strategy for THE NEXT time.

    I like the aldi's veggie burgers with edamame. They are so good that MIL accidentally ate one at a recent barbecue and was raving about it--before finding out it wasn't beef!

    Sounds fantastic. Love the meal and the Al fresco dining. What do you think of the Aldi's? I've never tried them.

    I'm so with you on oil. I've decided that Blue Zones people can't be wrong, but use it as judiciously as possible.

    Are you opposed to nuts? I'm totally pro-nut but weigh them most of the time.

    Awesome the hamburger bun thins, I use them too. I am roasting a plantain today after having found a recipe for a spicy black bean plantain mix. Can't wait to try it, so much healthier than fried plantain chips.
    Keep your NEXT time strategy handy, we all can use that.
