I made it to the middle of another week!!

One of my small goals is to make it to the middle of the week and check in with myself. I know after looking at my nutrition tracker I need to start eating foods with more iron so I'm looking for iron rich foods and and for the most part I'm eating 1-2 fruits or veggies with every meal so that part I'm doing alright on. I'm hard pressed to go out and buy certain veggies when I would be the only eating some of them and I know I don't want to keep eating the same veggie day after day if it's not a favorite, cauliflower definitely not a favorite and I've tried cooking it different ways and I can't find one way that I like it enough to buy it more often, now broccoli on the other hand I don't like it raw, but I love it steam with a little I Can't Believe it's Not Butter and I'm good, and spinach love the stuff, but I think I need to eat more.

I want to buy grapes but so far in my Target I've only seen the organic and I am not going to spend $5 dollars on a bag of them when I'm used to spending half as much. My main fruits right now are bananas, strawberries, peaches, apples, and pears. I am going to buy some raspberries and blueberries this weekend for a few recipes that I'm going to try.

I'm half way to the goal I've set on which is make two new recipes a week, so one down one to go just want to find one I know not only I will eat but Nana, she's a little picky in her food choices, I'm lucky she's eating the dishes I am cooking lol.

This weekend I'm going to make a blueberry coffee cake, which is something I've never made so that will be a new baking recipe for me. I'm excited to try it.
