Change of Pace- Curry

Though I keep containers of curry paste in the fridge and cans of coconut milk in my pantry, I rarely think about curry as an option for dinner.

I don’t know why..... because it surely seems like a perfect retaliation against the “mealtime blahs!! It’s a great opportunity to use up whatever veggies I have on hand, including dabs of leftover vegetables, and it seems like all kinds of curries benefit from bits of chicken, and even fruits like raisins and pineapple...

Not to mention added proteins like peanuts and cashews....

And you don’t even have to have a starch like rice or quinoa to round it out ...though it IS quite tasty that way....

Before I discovered curry pastes (yes, plural.... there are all kinds of curry flavor options that have a wide variety of hotness, so you just have to try them until you find your best “fit”)... there’s a big Asian grocery store in Austin that has a big selection, and i’m Working my way through the collection.... currently my favorite is a Massaman curry paste by Mae Ploy... a couple of tablespoonfuls is all it needs for a flavor treat distinctly different from my usual meals.

Refreshingly different, Curry!
