Today's pick was a wonderful one! I'm down to just one more day's supply of blueberries for my morning smoothie. I can't put it off any longer. It's picking time. Every year, I take the time to pick enough blueberries to fill ten gallon zip lock bags.
My neighbor Pam Mellon has a lovely berry patch called "The Mellon Patch". The 3 acre fields of berries are never sprayed, and delicious!
First I wash the berries, removing stems and debris. Next, I put one layer of the berries on my cookie sheets or oven pans and freeze them for 5-6 hours. Once they are as solid as marbles, I put them into the bags, and back into the freezer they go until needed.
Their vitamin/mineral content is as follows:
Vitamin K: Can improve bone health and prevent fractures. Vitamin K helps your body absorb calcium, and may even reduce insulin resistance in older adults.Manganese: This mineral helps prevent osteoporosis and reduces inflammation.

Vitamin C: This antioxidant helps with tissue repair and regrowth, boosts your immune system, and may reduce blood sugar and lipids in people with diabetes, which means it could help prevent diabetic complications.
