Goals & Gratitude 6/28/19

I am feeling more back to normal today, though I am still tired. I tried to get up early this morning but it didn't happen. I ended up turning off the alarm and getting up at my usual time. Despite that, I got all my reading done that I wanted to today. I just have all my assignments to do by Sunday night now. Most are very short, taking no more than 5 minutes, but the exams take longer. Also, the work for Management takes me about 45 minutes because it has "adaptive" technology, so if you get something wrong, the question gets sorted to the end and you have to do it until you get it right. All in all, I'm finding the classes interesting and enjoyable, so that's a good thing.

I got enrolled for my summer accounting classes today. I start them in about three weeks, so I won't be as busy until then. Then I'll be full time and it will be hard to do anything but homework. I've gotten into a good exercising routine the last month, though, and I'm determined to keep it up.

I made a really yummy dinner tonight. I got a new vegetarian cookbook while I was on vacation. I made roasted tomato sauce-- homemade spaghetti sauce of roasted plum tomatoes with garlic, salt, pepper, and olive oil. I have basil too, but I forgot to stir that in so I will do that tomorrow. I also made my own salad dressing-- sun-dried tomato vinaigrette-- and it's really, really good. I have about a cup left, so I'll use that over the next week or two. I forget how much better homemade dressings taste. That's something I should definitely do more often!

Tomorrow's Goals:
1) Finish the chapter three assignments and discussion board for Intro. to Management.
2) Finish the chapter one test and do all the chapter two assignments for Business Ethics.
3) Go for a walk or go to the gym, depending on how hot it is outside.

Today I'm Grateful For...
1) Yummy new recipes.
2) That I had exactly enough money for my grocery store trip today. (I use cash, not card.)
3) That I had plenty of time to read today, and that I got it all done.
