A & I W2 -- Nat'l Eat Your Vegetables Day

For the A & I team we had a couple of choices for Blog assignments. I chose
"National Eat Your Vegetables Day is observed annually on June 17. How do you get more vegetables into your diet? What are your favorite or least favorite vegetables? Do you have any good vegetable recipes to share? "
Brussel sprouts, asparagus & broccoli are my absolute favorites! I just like to throw them in the oven and roast 'em, but they still have to have some crunch to them. I can't eat soggy 'floppy' vegetables! I don't like peas -- never have!
Adding broccoli to a salad is a great way to get additional vegetables, too! Veggies added to eggs, mashed potatoes or just in a bowl by themselves are delicious, too!
