About a mon ago I joined the Planet Fitness that isn't far from my house. I've enjoyed going so far. I've put in on the schedule and stuck to it. I've also had my kids in daycare so I am able to d that as well as doing some things around the house. Unfortunately the day care is closed for their family vacation. It was planned before she opened the daycare, and I totally get it, she gets paid time off. But it means we have to find alternative plans and I don't get do anything for me for the next 10 days. I'm working on finding a neighbor or high schooler that may want to watch them a few hours to allow me to do my work outs at least.

With the start of summer we are actually busier than we had been. We got both kids in gymnastics and swimming lessons and our son is starting equine therapy in two weeks. He is SO excited!! Of course he keeps talking about how smelly the horses are, but this will be good.

With these added afternoon activities I need to reassess how we plan and prepare meals. Things I can put in the crock pot or Instant pot are going to have to take place of grilled meals. I have a few, but will need to find a few more things I think. Tonight when we got home I totally made up something to do with chicken breasts. I flattened them, pan fried them, then topped with black olives, jalapeƱos, salsa, and cheese. It was good. And I have left overs for lunch tomorrow.

Tomorrow is our daughter's 6th birthday. She is super excited. Speaking of, better be off to wrap her presents and prep her birthday dinner, and put the toys away. Lots to do still.

    we do a lot of equine therapy around here..its pretty wonderful!!

    heres an easy keto crockpot meal..

    take boneless skinless chicken breasts or legs and thighs. grease the crockpot.

    mix an 8 oz block of softened cream cheese with a packet of good seasons italian dry dressing mix. mix in enough cream to make it spreadable...to your taste if you like a loose sauce or a thicker one.

    put in a layer of the chicken. spread or drop a layer of the "sauce" then sprinkle with parmesan.
    repeat layers. I have a small one person crockpot, so i put down one or 2 pieces in a layer..if you have a larger one you can do one layer..no need to make layers if you dont have to.

    cook on low for 6 hours, or high for 4..more time wont hurt it i would just do it on low if its going to be for longer.

    i shred it and mix it all together..and serve like that..you can do it on zucchini noodles or whatever. serve with more parmesan.

    so far i havent found anyone that doesnt love it!!

    Equine therapy. Your son is excited, and talking about how smelly the horses are. Yup. They may be smelly, but that sounds like a good thing!
