Keto Day 10

Having my first slight bounce back weight going up a pound on the scale, but I think it's just my digestive system is still full from dinner, which means maybe my guts are doing better and healed up more, yay! :-P I was half hoping to be back down within a couple of pounds of my lowest weight this year, I'm ready to lose "new" pounds and be finished with re-losing after this break. My face doesn't seem to be clearing up any better OR breaking out any worse with this shift back to keto, so I think my skin doesn't care which way I'm eating, it's going to break out anyway. My Dermatologist is fighting with my insurance to get me a different medication that treats Rosacea as that's one of the underlying causes of my acne. My foot turns out to be tricky and have at least 2 things wrong with it, one is either Psoriasis or Excema, and the other is a fungal toenail infection so we're treating that first. He had me take off my shoe and sock to see my "good" foot and exclaimed to the nurse to come look at it, it was "Pristine!" and he'd never seen anything like it before, to have one foot so damaged and the other untouched!! So I now have Mystery Foot and Pristine Foot. ^-^

I was supposed to be out of town this weekend so I ran out of butter for my butter coffee and used coconut oil instead and with the keto creamer and whipping cream it's delicious! So now I need to get more coconut oil as I'm almost out of that too! I still need to re-melt my attempt at peanut butter chocolate keto fat bombs and see if that makes them less grainy, I stirred in the erythritol granules at the end and I think they're what's making it gritty. If that doesn't work I'll just try to finish it off and do a different concoction next time. I made the mistake of trying to thicken them with coconut flour though so that added enough carbs I have to be careful to only eat them when I have the wiggle room, and I don't want to cut out actual veggie carbs because I'm still trying to get 3 to 5 servings of veggies a day depending on how my guts are reacting to them. I had my Stelara injection June 4 so I'm hoping my guts get much better and let me eat 5 veggies a day soon.

    I use coconut oil and butter in my coffee, not cream. Love it that way. And I have just been eating the peanut butter right out of the jar with a spoon. Doing the fat bombs was too much of a pain and I never got them to come out just right. I like the peanut butter much more than the chocolate anyway so it works for me! I got some of the other nut butters too! I mixed unsweetened coconut flakes into almond butter with a little coconut oil to make it creamier. Added in some vanilla extract. It's like heaven in a jar!

    Day 10 of Keto! Well this is a big step. You've made it through the worst of the low energy, and headache issues, and your body is much better using fat, either what you eat, or your own body fat. It just gets easier from here on.

    Also, one continues to more easily burn fat as the next few weeks go on. In other words much more even hunger.
