Keto Day 2

I ended up extending my break from keto for most of a second week so I could have the guava cake I've been craving for 37 years. I ended up staying mostly withing my calorie range except for a couple of days, and enjoyed having fruits more, but the extended days I hadn't meal planned for ended up with more starchy filler foods I didn't really enjoy as much as I would have if they were all treats instead of foraging "make do" foods. For example, I thought I still might have some frozen multi grain bread in the freezer, but I couldn't find it so hubby probably ate it. This left me with no bread type item I would consider "worth it" to enjoy the carbs, but I really wanted some kind of bread in my meal so I ended up eating a hot dog bun. Not a treat, more of a "stop the hungry I want to get off" desperation. I don't like finding myself in that state of mind. I want to work on setting myself up better. I was sad I didn't get as much fresh fruit as I'd planned as hubby did the shopping without me and only brought back 2 servings of fruit. I had pictured having 2 servings of fruit for breakfast each day for 3-4 days, oops that didn't happen!
I made a version of the eggplant dish we discovered at an Indian buffet during our week of food adventures, and hubby had it over rice while I had it without. We have 2 kinds of little mushrooms we got at a new to us H-Mart and I want to use them as noodle replacements in what would have been ramen or pho style noodle bowls. Grocery shopping today and considering attempting a gumbo with almond flour roux.
