Gluten free has changed my life!

For over 20 years I have had stomach problems. I was diagnosed with Irritable Bowel Syndrome about 25 years ago. The advice was if you bloat up and are in agony, don't eat that again. The only thing that seemed to be recurring was beef, so I gave that up for a while. The symptoms kept happening but I just thought this was how my life was supposed to be.
About 5 months ago, I found my best friend from high school on social media. We hadn't seen each other in almost 30 years. She has Celiac's Disease and we would go out for meals and she started talking about gluten. I decided to try going Gluten Free for two weeks. IT WAS AMAZING!!! I didn't have any stomach pain, my stomach stopped blowing up like a basketball. After two weeks, I decided to try a meal with gluten...BOOM, I looked 8 months pregnant in about 20 minutes and was in agony! I have been Gluten Free for about 4 months and besides losing 18 pounds without trying, I am not in constant pain for the first time in 25 years!
There have been challenges. I run two wedding businesses and I really don't enjoy cooking. My energy level is something I am still working on. As someone that has felt carbs were the enemy, I now have to consciously eat carbs. I have found that I love quinoa and I am finding time to make rice. Sweet potatoes are amazing! If I am desperate for a fast food snack...yes, I can have a strawberry shake and fries. I only do this about once a month. Most grocery stores have either a gluten free section or you can find labels on products. There are also many websites that will tell you which restaurants and products are gluten free. I had to learn to read nutrition labels for ingredients that contain gluten. I still have cinnamon toast and english muffins, check the frozen food aisles! Also check stores known for healthier products, Trader Joes and Sprouts have lists or entire aisles of gluten free. I also had to find vitamins and over the counter medicines that were gluten free.
I'm still figuring it all out but I now weigh the least I have in several years and I eat when I am hungry, I'm choosing fruits and veggies as my "go to" snacks. I found gluten free pretzels and cookies so I have my sweets too! I'm almost 57 years old...so yes, you can teach an old, well, you know the saying!
