Cooking Challenge #9- Salmon and Prawn patties

This dish involved a LOT of chopping. It was basically pretty easy as the patties only contained 3 ingredients: salmon, prawn (shrimp), and onion. The patties are then dressed with an organic, gluten free Ponzu sauce (citrus soy sauce) that my daughter especially loves and were supposed to have fresh shredded ginger on top. Since it was a father/daughter movie night, I ran out of time and just used pickled ginger which we all love and eat a ridiculous amount of.
I served it with a carrot/celery salad dressed with a gluten free miso mayo, and cooked organic kale with real bacon bits. Family thought all the flavours went well so it will be on the menu again.
