As fast as spring arrived, it is seemingly going by ever so quickly. Soon will be summer, sticky hands from melting slurpy popsicles, sunburn noses and freckled cheeks. Yes, the lazy calm days of summer will be upon us before we know it.
Time sure does fly by fast. Sometimes I wish so hard it wouldn’t. Funny, how when I was much younger, time just seemed to crawl. But it doesn’t anymore.
I am on a new kick. I adore tempeh. It is sold near the tofu, it is much more denser and has a nutty flavor to it. I marinate it with vegetables in a soy mixture and then roast it all for about an hour. It is a delicious dish, totally vegan or vegetarian, which ever you like, extremely healthy and low in calories.
I am still in the process of my “less is more” mission and although there are wonderful things I am donating, I haven’t used or I just don’t like anymore. I despise clutter and I can’t deal with an overfilled closet. So if I don’t wear something within a year, it goes out the door.
I do have to admit, my garden and patio looks pretty good. All the container plants are just about full bloom, and Bernie (“the dog”) seems to enjoy the patio and lies in the sun for most of the day. I am now restricting him to fewer treats, believe it or not from an emaciated dog last November when I rescued him and now, he is becoming a bit chubby (18lbs later.) ;0)
So on that note, enjoy the spring weather, move a little more than usual, toss away something you haven’t used in awhile and hug your dog if you have one. It’s all good one way or another, eh?
