A small BBQ feast

I tried out another great recipe...this time for boneless pork ribs.
They were on sale and I picked up 2.5 lbs for $4.60.
So I used my little 3 qt INSTANT POT and made BBQ pork.

I used 1 1/4 lbs of the boneless pork ribs and seasoned it with some sage, dry mustard, thyme, and rosemary. I sliced an onion and 2 cloves of garlic and put it in the bottom of my INSTANT POT. I added the pork to the POT. I threw in 1/4 cup of sun dried tomatoes. Then I mixed 1//2 cup of Kikkoman Takumi Korean BBQ sauce with 1/2 cup Dry Sherry and poured that over everything. I set the timer to pressure cook on high for 35 minutes.

Meanwhile I roasted some baby red potatoes with a drizzle of EVOO, salt, rosemary, and fresh ground pepper.

Once the pork was done I did a natural release for 5 minutes. I then put the BBQ pork under the broiler for 3 minutes (atop a piece of aluminum foil on a cookie sheet...because I hate cleanup) and then let it rest.

But there was this amazing liquid in my INSTANT POT that just couldn't go to waste.
While the BBQ was in the broiler ,
I put some baby carrots in one section and some cauliflower florettes in the other half and set the timer for 6 minutes to pressure cook. Ooooh.

Relatively quick, a feast with easy cleanup. And makes enough for 3 hearty servings. YUM
